easy thai red vegetable curry recipe [Jul. 14th, 2007|08:30 am]

what you will need:

1 tub thai red curry paste (the proper stuff from thailand)
500g mushrooms
2 tins coconut milk
1 tin potatoes
1 small bag frozen peas
1 tin water chestnuts
1 tin bamboo shoots
1 lime

ok put two tablespoons of the curry paste into your hot wok
not too hot mind you.
but you know, hot enough not to burn.
chuck in your chopped shrooms
sweat down
add two tins of coconut milk
add chopped chilli to taste
add 1 tablespoon brown sugar
add juice of half a lime
add chopped potatoes, water chestnuts, bamboo shoots, frozen peas to taste
cook one/two/three/four cup(s) basmati rice

serve
